Domaine Jean Defaix Chablis (screw cap) 2023 seville-hill It has a generousDaniel Dampt is one of Chablis most celebrated producers, and he produces wines both under his own name and that of Jean Defaix, his father in law. The domaine covers 30 hectares of vines (16 in AOC Chablis and 14 in 1er Cru vineyards) split across five sites. A stylish and classic Chablis with body and balance. Intensely fresh and bone dry, with steely flavours of apple and citrus and oodles of oyster shell minerality.
